GFB is the Gluten Free Bakery (and formerly Rana’s Bakery). It is well known in the restaurant trade for providing delicious freshly baked gluten free artisan sourdough bread to  restaurants. And now they have developed these simple baking kits so you could recreate the warm delicious gluten free bread and crispy crackers in your own home. All kits are super simple to use – just add water!

NatureDoc Tip: You may need to experiment with timing and oven temperature. It took us three tries to get the loaf beautifully golden and crusty. We did that by bumping up the temperature to 220 instead of 210 degrees in the instructions, and increasing the baking time on the label by 10 minutes to 90 minutes in a non-fan oven. And then it was FANTASTIC!

All Rana’s Bakery Mixes are:

  • Free from all 14 major allergens
  • Yeast free and made from real sourdough
  • Suitable for vegans
  • No preservatives, refined sugar or nasties!

Mixes contain no preservatives, so will keep like any artisan bread.

Can be frozen once made for 3 months. Defrost at room temperature or 10-15 minutes in the oven to serve warm.

Ingredients

New Italian Sourdough: Potato starch, brown rice flour, tapioca flour (modified), sarghum flour, gluten free oat flour, stabiliser: xanthan gum, sourdough starter (3%), salt, gluten free oats, coconut sugar, pineapple juice powder.

Bold Buckwheat: Potato starch, brown rice flour*, buckwheat flour*, tapioca flour (modified), pumpkin seeds, chia seeds, sourdough starter (3%), salt, stabiliser: xanthan gum *Organic.

Ingenious Flatbread: Potato starch, tapioca flour (modified), brown rice flour*, sorghum flour, millet flour*, oat flour, stabilser: xanthan gum, salt, sourdough starter (1%), coconut sugar*, gluten free oats, garlic. *Organic.

Super Sourdough: Brown Rice Flour*, Potato Starch, Tapioca Flour (modified), Sorghum Flour*,  Sourdough Starter (9%), Millet Flour*, Salt, Stabiliser: Xanthan Gum. *Organic.

Nearly Rye: Potato starch, brown rice flower, buckwheat flour, teff flour, sorghum flour, tapioca flour (modified), caraway seeds, salt, sourdough starter (3%), stabiliser: xanthan gum, fennel seeds, coconut sugar.

Crispy Crackers: potato starch, tapioca flour (modified), brown rice flour, sorghum flour, millet flour, oat flour, stabiliser: xanthan gum, salt, sourdough starter (1%), coconut sugar, gluten free oats, garlic, pineapple juice powder.

 

Instructions
Add water – Mix – Place on the parchment provided in the kit – Shape using a wet spatula – Place in the baking bag provided in the kit – Bake!

    To be honest I didn’t think that I woud be able to make good bread from a packet like this but I was pleasantly surprised! It was really tasty and light yet with a crunchy crust. I really enjoyed eating this! The only reason why I didn’t give it a 5 was that it says Paelo Grain-Free but it did contain rice in the form of rice flour amongst a few other grains.
